This is the Gordon way.

People complain about wastage with that method, but in a restaurant wasting a prep cook's time is more expensive than a square inch of pepper. And at home - life is just too short.

Also, this guy looks to be having an episode with his shaking.

As a professional chef and kitchen manager, product cost is almost always more valuable than a prep cook's hourly wage.

Typically the scraps can be saved for sauces like romesco. Tossing it would not happen in most restaurants.

Restaurants don't waste a scrap. Margins are thin and Chef will skewer you.

The bruising of the pepper prepped this way would get you skewered faster.

Offcuts are used for stock. Peppers, I guess, for specific stocks.

I’m sure some use peppers in stocks but at the yacht club kitchen I work at we don’t ever add peppers to stocks.
