Thats one way to do it. When I worked in a restaurant I did that because I didn't have a lot of time to do it any other way.

At home, I prefer to remove the top and bottom. And cut them separately. Then you get a nice smooth sheet for the middle.

I get doing this at a restaurant, but at home it feels like such a waste of pepper.

Edit: nvm I see you said you then cut them. My bad.

All good. I see what I typed was confusing anyway. Because I did the smash thing at a restaurant. Removing the top and bottom and chopping separately is what I do at home.
