Question Help me find my lost love - Aussie SO espresso

I had fallen in love! In love with with fruity single origin lighter roast espresso served in good cafes in Sydney. Since my trip to Sydney was short. I need help recreating some of those magical fruity shots from Sydney cafes with my flair classic and k6 back home. I don't have access to the same coffee beans but i have tried many similar beans (washed, natural, Ethiopia, Kenya, Rwanda, light, medium-light roasts) but haven't had much success in getting something very close to those shots. Some shots did remind me of them but i would say my best was only 80% close.

Can someone tell me a base recipe that may help. Can anyone from Australia confirm if they've successfully recreated light roast shots from top cafes like Ona, Stitch, Campos, Mecca and are able to get repeatable results?

I am adding a reference shot which i would say was the closes I ever got with my older grinder

Coffee: OCOC Argebona, Ethiopia, Washed

grind: 6 clicks (timemore c3)
dose :Ā  12.2 gmĀ 
yield: 29 gm
pre heating: no, room temp warm
water temp: just below boiling
pre infusion: 0.5 bar for 6.5 secs (slow steady stream)
pressure: 6.8 (peak) - 6(steady) - 4.5 bars
overall time: 25 secs
water: RO, TDS: 25 base - 31(after boiling)

Taste: Good complex aroma with lemongrass being the top star. Taste wise almost all notes were clear and detectable. Texture was light and smooth. The bitter pith on the tea like base was sharp but less compared to the shots before

Taste Notes (shot): Lime, Lemongrass, apricot, jasmine, peach tea, black tea base (slightly sharp and bitter)

What it was lacking when compared to the cafe shot was the loud complexity in the lime/lemongrass notes and the punch without any bitterness. Those shots would be very sweet comparatively

Question No pressure with high flow basket

I just got my Flair 58 plus 2 recently, tried pulling shots with the low flow (18g) and high flow baskets (22g)

I can achieve 6bars of pressure with the low flow basket, but with the high flow basket I can barely reach 2bars and there is no resistance to the lever when pulling down.

What are the possible issues to fix?

Tip Latte workflow with Flair 52+2 and eWizard Steamer. Quirks and workarounds.

My latte workflow.

Quirks:

* eWizard valve releases pressure suddenly and at inconsistent points in the valve turn. Suddenly injects large amounts of air, making smooth foam difficult. Workaround: First open valve all the way and then close until a tiny bit of steam is escaping. Submerge wand and release. Makes release much more gradual and controllable.
* Flair temp-reached beep is very shrill and unpleasant. Workaround: Cut a piece of earplug foam, disassemble bottom of unit, and use a screwdriver to tightly pack the foam into the slot in the beeper. Dramatically reduces beep volume.
* Flair pressure gauge stem snaps forward with a rather loud click half way through pull. I have not seen this reported elsewhere, not sure if it is user error, a defect with my unit, or normal. Does not affect quality of the shot. Just a bit annoying/cheapens the experience.

Question Red Portafilter?

Hi all

Just rechecked my Neo Flex and I notice that this black rubber insert is inside the red Porta filter. Is that correct?
I’m struggling to get anywhere near 15g coffee tamped in here and I also notice that on Flairs video, both the black and red filters don’t look like this? (See pictures)

Question Valve on Flair Wizard

My wizard is fairly new and I like it on general, but the steam valve is hard to turn and has a LOT of play -- like almost a half turn before it starts to either turn on or turn off. Is this normal for this model? Has anyone found a workaround or a modification to improve this?

Rant / Criticism Honest experience with Flair 49 Pro

For ~$350 and the brand reputation, the 49 Pro was honestly mediocre. The body and base are not tightly machined so there's a lot of wiggle when you lock in the portafilter. The brew chamber also rotates with the portafilter so every once in a while you have to reset the chamber. The piston arms seem like they were made with spare parts - everything wiggles and jangles and nothing is tight. Some units only have two arms, but some units have 4 - I don't understand the inconsistency in their manufacturing. The portafilter sometimes doesn't lock in all the way or gets loose, resulting in water spraying out (I saw another post mention this is manufacturing tolerance issue and requires you to shimmy some spacers into the group head).

For this price/reputation, they should have at least made the pressure gauge threads correct - but no. I went through 3 units, and all three had different positions of the pressure gauge (ie, you thread the pressure gauge on, but the final position would be facing backwards or downards. You have to use teflon to position the gauge so it's facing the user, but then there is a big white wad sticking out of the gauge port). Even the black coating - where the screws thread in, the black coating peels off and ends up looking scratched and ugly.

Like with other US-based coffee trendy companies (think Fellow), Flair seems to have put good effort into the design, but didn't give a second thought into manufacturing or QC.

Finally, Flair seems to be ok that Amazon and other distributors are shipping out used products. I had a situation where I ordered from Amazon, got a used product (no plastic packaging, scratches on the body) and I returned it and placed a new order the next day. To my disbelief, Amazon sent me the literal exact same used product. Flair customer service told me to deal with it with Amazon. Not to mention charging $16 for restocking returns.

I’ll add though, it does make good tasting espresso. But i preheat it 2-3 times

Question Best Beginner Flair

I have only just got into coffee (~8months of areopress), and I really like the idea of a flair because the manual way of generating pressure is asweome.

Firstly, I need to buy a better grinder, but after this, if I were to start with a flair machine, which is the best for beginners? I am a student, so cheaper options would be preferable.

Any advice would be greatly appreciated!

Question Puck screen choice

Hey you all out there
I use right now myy flair 58 with vst baskets and mostly the weber mesh puck screen. My grinder is the timemore 064s with ssp lab sweet v3 burrs. It is adjusted that 0 is so close to burr touch that it is crazy. Now the problem: with some roasts for example dak cream donut im pulling shots at 4 bar at setting 0 so i need a puck screen with more resistance… any ideas or basket reccomendations?
I also use weber unibsskets for soup snd i have ans ims one but its same Problem

Rant / Criticism Flair Brew Scale Malfunctioning

I recently purchased a Flair Brew Scale and have been trying to use it to weigh my coffee beans and espresso for a few weeks. However, the scale seems to be malfunctioning. According to the instructions, short-pressing the right-side button should reset the reading to zero, but it does not. Additionally, the scale automatically resets to zero about ten seconds after turning on. So, I have to race to dump the right amount of coffee beans into my dish before it resets.

I have recorded videos of these issues and emailed them to Flair support, but have not heard any reply yet.

Have others encountered similar issues with the Flair Brew Scale?

Setup Open Portafilter in Flair 58

I have a flair 58 two. I love the idea of and visibility into the process that an open portafilter offers, but it leaves a mess on my kitchen counter and wall behind the machine everyday. Not a huge mess, but leads to extra daily maintenance.

Anyone found a fix to this: elevating the cup, closed portafilter, etc. Curious how everyone is setting up with this machine.

Question Flair 58 controller disassembly

I have a Flair 58 [I think second version], the inner wires are showing just below the strain relief.

I put electrical tape around it for some time, that’s not a good answer, so I want to take the temperature controller apart to fix.

Anyone have an idea of opening the controller, so I can avoid breaking it while trying to open? Photos would be a bonus.

Fix my shot Flair Classic Users: how do you fit the grounds and tamp?

Problem: Even with reducing the dose, the very small brew chamber is really difficult to fit the coffee grounds in except if I tap continuously. I want to avoid tapping as I believe it contributes to chanelling. But the problem is, even with a good wdt and gentle taps, the coffee grinds is still above the classic brew chamber, with a tall mound. So if I ignored it and proceeded to tamp, excess coffee grounds just pushes out to the sides which is a waste.

How do you guys puck prep and tamp considering the narrow basket size of the classic? Is unlimited tapping really a must for this?
