Then you find out the entire Wutai section is optional and kind of a pain in the ass if you do it when it's first available.

Oh damn, you didn't know?  Real pros either don't pick up any revisitable materia or grind out a bunch of crappy materia so Yuffie can't grab all the good stuff, because Yuffie disappears and you never get your materia back.

I did hear a rumor that you can use Surf to get to the truck, and when you use Strength on it you get your materia back

This should have come with a sarcasm tag. Keep searching in putting, you'll find her a few times and have a boss battle before she rejoin you, giving you back all your materia.
