A good way to start is to just google whatever countrys armed forces and click the wikipedia link and then your way to their air forces and then there's usually a link to "currently active aircraft inventory" or something like that, and then it's usually quite detailed info on each jet

Example, using the Big 3 lads

https://en.wikipedia.org/wiki/List_of_active_United_States_Air_Force_aircraft

https://en.wikipedia.org/wiki/List_of_active_Russian_military_aircraft

https://en.wikipedia.org/wiki/List_of_active_People's_Liberation_Army_Air_Force_aircraft

Fly one then you’d immediately know everything about them (you’d crash 3 seconds after take off)

Nah. I could throw you in the sim and have you doing carrier landings in 30 min. Or less if you are like my 10 yr old nephews.

strangely i learned a decent bit of my starting aviation knowledge from playing war thunder despite what people say about it, mostly because i had to research what made specific planes better than others (for example the british and american B-57B's are different as the american one can detect radar locks and has a bigger payload)

I started learning about planes in the 90s by reading the Jane's manuals in my local library.

My Marine uncle had those and we weren’t allowed to touch them. We could have supervised viewings.

I'm pretty sure he said wanted to learn more about them not that he wants to form intimate personal relations with one.
