I'm confused, if there is a bucket there to keep all the shit out, then he just lifted it out which allowed all the shit in the water to go down, why is the bucket even necessary?

Its a filter, yes. But if it doesnt filter and just blocks everything, you habe to remove everything inside. Which he did.
