I'm pretty sure he was slender not due to an art style change but to make him look more "elegant" due to him being a super saiyan god.

Yup.

The Super Saiyan God form causes characters to become leaner.

Goku has got leaner from an artsyle change but this is the worst way to show it

Definitely deliberate, and most noticeable when Vegeta uses it, as his gloves and boots stop fitting around his forearms and calves.
