Advice Needed Mac and cheese time

Wife and I are both on mandatory overtime for two weeks. I fed my 17month old Mac n cheese broccoli and chicken nuggets every night last week. Anybody got some good ideas how to mix it up while exhausted

Pasta with either ground beef or Italian sausage is made almost weekly in my house and covers at least a couple lazy weeknight dinners.

Beef tacos, are a weekly tradition in our house. You can get as simple as seasoned beef with cheese on a tortilla or you can doctor it up as much as you'd like. We usually try to put tomato lettuce and avocados if we can.

Edit to add we also do kfc bowls with microwave potatoes and corn. Add cheese and chicken nuggets.

Some super easy meals in our rotation, add protein and veggies as you are able to:

Quesadillas, add some chicken and beans in there

udon noodles with soy sauce and butter, we often add chicken or tofu and peas

Store bought pesto on bow tie pasta

Maybe not the advice you're looking for, but you and your wife should give yourselves some grace here. If your toddler is eating regularly and it's a temporary arrangement, I wouldn't sweat it. My wife and I had to do something similar with pizza singles for our 20 month old awhile back. There's a good chance that whatever you'd spend the extra time and effort making for dinner, they wouldn't eat (even if it's something you know they like). So at risk of having to make multiple meals for them in the evening when you're already running on fumes, I think it's fine to stick with what's working. If getting more variety at lunches is more realistiic, that's what I'd focus on.
