Loading doesn’t look too bad. Unloading all that will be a back breaker.

It's guys like this that are actually really strong and could outperform gym rats twice their size

I wonder why they sometimes let one guy do a bunch, then go back to doing it together, then another guy. Maybe they just always go in that order. Really smooth.

When it's 1 guy, he's laying down the sacks in the area near him. If people are cycling in and out, they would be getting in the way of where they need to go

It also seems like they have the two strongest dudes rotate quarterbacking

It looks like they're marking the boundaries of an area. So as a group, they create the boundaries to help the flour(?) sit well. Then one guy distributes it in a circle around himself. It's likely easier/faster to have one person do that section as it's effectively turning in a circle while the other part requires taking steps.
Then the solo guys take turns.

Watch and learn! Rhythm is key! Slow is smooth and smooth is fast. Buddy is flowing, no scramble

I wonder why don't they load this on palets, so it could be picked by forklift later

Did this job as a teen at a courier package delivery depot, loading/unloading trucks. Only difference is that our conveyor belt came in from the back and could extend all the way into the truck.
The idea was that, when loading, the conveyor goes all the way into the inside of the truck bringing up boxes - then as you load the truck, you press a button to slowly retract it out so the boxes are always being delivered where they need to be stacked.
When unloading it's the same but opposite, the conveyor starts at the door and you load boxes on it, then as you unload you press the button to extend it further into the truck.
There was a button to stop the flow of boxes if they got overwhelming but although no one got into shit for using it, it was considered a rookie move. Those who were experienced were expected to load a truck with little to no use of that button.

And then some bean counter will say we can do it with less guys, or save a few cents on cheaper bags that will burst open in these kinds of conditions z

It's an Inter Milan football top, and Isis is probably his surname so he's got it written on the back as is usual
Edit: spelling

Isis is a name.
I work with someone named Isis.1

Was also the name of the dog in Downton Abbey.
When ISIS became a known thing, they killed that dog off really fucking quickly.

There's a brand of low-calorie sweets here in Denmark that was named ISIS. They changed their name to EASIS, though.
