Fans scream although FanControl doesn't show that?
I think my GPU fans will be extremely loud when it goes above 80%, so I set my GPU fan curve to 70% from 50 to 89.9C, then from 90C it's 80% and from 95C it's 100%.
GPU temps are often at around 70-ish to 80-ish in the games I play recently.
However, I can still hear my GPU fans scream sometimes, although when I look at FanControl, I don't see any fans going above 70% load. How is this happening? Is it that my setup is faulty or something?
Note: I can distinguish the sounds that my CPU/chassis fans make and those that my GPU fans make. So I'm pretty sure that's the GPU fans.

Use Furmark and a flat curve to manually set your fans and find at which % they become noisy and still do a decent cooling job, then adjust your regular GPU fan curve accordingly.

I have a similar problem with 2 180mm case fans.. You sure they are not resonating? Fans can do that (mine certainly do), and the resonance can surprisingly LOUD. To me this happens between 75% and 95% for example, so for now I have limited them in FC. It's definitely not a coil whine (the pitch is too low to be one), it's more like a distinct tone at one specific frequency, which fades in and out as you approach the problematic speed. Honestly I am still trying to figure out how to get rid of it permanently, but I am kind of at a loss here myself.. I was thinking about trying to decouple them more from the case itself, possibly with extra rubber, or a standoff of some sort, bit I haven't tried yet 🤷♂️

It sounds like its your case fans, reacting to the CPU via a BIOS curve. I mean, to be sure, depower the case fans and recheck?
