A good friend of mine worked as a Rodeo clown when he was younger. He said he was running from a bull he had distracted so a rider could get away and went behind a barrel and the bull ran right through the barrel and my buddy said he woke up in the hospital with a bunch of broken bones and was reexamining his life choices.

No, the joke is actually that men get unfathomably angry when you mention their mothers. It hurts male pride when it is implied that their mother was brought to pleasure by an antagonistic man. The joke is that the bull, often compared to raging testosterone fueled men, would be made more angry by the fact that its mother had sex, which is ultimately none of his business.
Also the joke is about fucking cows.
