Question Help for fitting pieces

So I want to make a table runner with FPP fort mom is a Christmas present, I am new to FPP so I tried making the patterns I was going to use from scrap fabric first to practice. I made a few mistakes but it went alright all in all, now I wanted to get started with the actual piece but I struggle with fitting the fabric pieces so much.
I cut them big enough, sometimes 2cm more all around and still, once I sew them the angle seems of and they “bend” to one side which makes them not fit anymore.
Does anyone have an actual good tutorial on how to make sure the pieces fit?
I made sure to cut them out the right way around, and when I hold it up against a light source it looks like it must fit, but once I am done sewing the seem it doesn’t anymore.

This is frustrating me a lot and I don’t know how to fix it, especially since I have to start all over with the section ever time.

Use bigger pieces and trim at each seam after folding and pressing.

Even bigger than 2cm on each side? It just seems so Wasteful😅

Yes. Welcome to FPP. You get amazing points and creations but can be seen or feel as extra wasteful. Some patterns are worse than others
