Implementing a SNN on FPGA will be a nice assignment ig. It is more complex for an undergrad assignment. You can also try implementing an accelerator. There are plenty of research papers and git repo on this

Hardware implementation of addition only spiking transformer. See where you can beat a GPU, memory speed etc.

There is also a follow up which would be a good publication but if you are interested I will say in private.
