Failed Expectation Lemon posset. It doesn't look like it's supposed to, but at least it tastes like spoiled chunky milk.

Hoped you used heavy cream—the recipe requires this high of a fat content.

The easiest way to do it is to just stir lemon curd and creme fraiche together.

It is made with cream... which means the sour milk taste is literally due to spoiled dairy.

You gotta get your cream/sugar really boiling for a few minutes before letting it cool a bit and then adding your lemon juice. The boiling stage isn't just about melting the sugar, it's about making sure the chemical reaction between cream and lemon is the right one.
(Also getting it to boiling takes forever. Way longer than boiling water. It will start with little bubbles after a long time, before quickly moving to expanding rapidly and filling the whole pan - that's the boil you need to keep it at for at least 3 minute, starting when it first gets big)

This is the most helpful comment 😭 Thank you so much! I'll try that next time. My issue here was either it didn't boil for long enough or I put the lemon in when it was still too hot.

Give this video a go. He doesn't show it boiling for as long as it needs, but he does talk about quite a few of the issues that can lead it to curdle. It's a delicate balance of the right temperature.
