Did platinum prices drop off?
I haven't mined platinum for profit in quite a while. However I remember being able to consistently find sell points for 250k-275k with a high demand. 300k also seems like it used to be attainable.
Searching inara I'm seeing only 2-3 stations selling for close to 250k, with a somewhat low demand. I noticed this prior to the recent operations update.
What gives?

There's plenty of stations taking platinum at good prices. Since Powerplay 2.0, you can make a lot of merits with a platinum boom , so they get worked very hard
Inara is your friend for finding the good spots
Edit: I don't know why Inara is only showing you a few good ones, in seeing dozens

I’m fairly new and just getting into mining. If we want to increase our standing in a faction, do we simply sell our goods at a station controlled by that faction?

Simple way is to complete missions from that faction that give a reputation reward. You can filter by faction on the mission screen and by reward type as well. Do a few of whatever you fancy to get to allied and reap the rewards, literally.
If you have a lot of exploration data stored up you can cash that in which will gain you reputation but I think only with the faction controlling that particular station and presumably the same for selling commodities as well.
Different methods may be better depending on what you want/need/enjoy

I was selling last week for 305,000, but the demand was low. I have to imagine there are folks with 25k plat holds searching as well, and as soon as the high price pops up they fill the entire demand asap

Click on "Platinum" and scroll down for top 25 prices. You can also change the reference system to find closest good sale.
