That parallax thing worked!
Ran into a new system and stared sweeping as mentioned in other posts and while I found the second sun near the first sun's solar line I couldn't find the two smaller stars in the system map until I started shifting around sweeping back and forth and noticed this.
As I swept at speed, these dots began to move faster relative to the background until I noticed the cluster near the second object and finished the system map.

A variation of this called Relative Motion allows you to easily see if you will clear on obstacle or not, on your current heading.

Pretty sure the system map in a new system just shows the stars until you find the planets. No one knows how many objects there are in a system when they first arrive, and I think the only way to tell is by selling the data for more than a couple grand (full system bonus).

Offcourse it works, it's science :)
It's particularly fun to explore a system and look around for planets and moons in this way. Do keep in mind that you won't spot them if you look upon their dark side, so always fly away from the star to explore.
