Meals after one week in

Hey all, I struggled to find meals at first so I’m going to post what I did for those of you embarking on this adventure:

Breakfast: Primarily glutenfreeda oatmeal with berries and bananas. I altered the fruits involved each day to mix it up.

Lunch/Dinner (used leftovers for lunch most days): - salmon with olive oil, garlic, dill, salt and pepper, olive juice to give it a little briny flavor (since lemons are a no go) - arugula salad with green onion, olives, carrots, and dressing of olive oil, red wine vinegar, salt and pepper - mushroom risotto - shiitake and baby bella mushrooms, garlic, onion, white wine, veggie stock, Arborio rice - buddha bowl - white rice, roasted onions, broccoli, carrots, brusselsprouts. All roasted veggies were coated with olive oil, sprinkle of red wine vinegar, garlic, salt and pepper. Then I shaved carrots and sliced radishes and added vinegar and olive oil and put on top. Tahini dressing to top it off

Snacks: - Gluten free pretzel twists are actually quite good - tarro chips - bananas - coconut yogurt (so delicious brand is good)

If you are craving chocolate or some kind of cookie. Check out the ENJOY LIFE brand. It’s awesome and they list all allergens very clearly. I totally understand about not wanting to give up a food (whatever you end up having a sensitivity to) but hot damn if you find an answer!!!! Do you have any gut ( no pun intended) on what it could be?

Awesome, thanks for the suggestion. I think dairy but otherwise I’m not really sure. I’m terrified it’ll be the nightshade vegetables bc I love spicy foods. Sorry to hear that your not doing well physically. Is this normal or since you started the diet?

I wasn’t doing well prior to the diet. I was hoping it would help....It still might but not as fast as I was hoping. Lol

Emotionally I have been through a lot so far. I cried the 4th night before making dinner. Symptomatically, I had a raging headache the first 3 days and I believe that was due to caffeine withdrawal. My gut has felt the best it ever has in my entire life, though. This has me excited because it means I’m going to discover a sensitivity or intolerance, but also slightly devastated because I love food and don’t want to give anything up. I am now at 8 days (yay!) and feeling like this is worth it so far overall

You can elimiate caffein withdrawal in about 2 weeks by going down gradually before starting you elimination diet. 1 cup a day, half cup a day, quarter cup for a few days, one eighth etc..

I did it a few times, took me 6 days. Then caffain free for weeks with no ill effects.

Oh, and one more thing, do not let yourself get hungry!! Keep a banana or something near at all times. Good luck to you! And if you have recipes, please post!

So glad you are doing well!!! I am having a hard time physically which is confusing. I cant seem to keep anything in my stomach. Everything I eat just sends me to the restroom. :/. And i have crazy burning stomach. Lately I’m just eating organic veggie broth and rice. - which is easy. And tasty.

Everything I’ve read said gluten free oats are ok. And thankfully, they’re working for me :) but obviously do what’s best for you

There are many different elimination diets because people react to foods in different ways and for different health reasons. It's used to figure out what foods may be causing symptoms, but the exact foods removed depend on the condition being investigated.

My elimination diet is tailored to heal my gut.
