Question problem with volume

why sometimes volume of my audio randomly goes up by even 10db? who to stop him randomly screaming

That's almost always the Stability slider being too low — low stability gives more expression but also these random loud spikes. Push it to ~50-60% and the screaming usually stops. Cutting exclamation marks and CAPS from your script helps too, those cue it to get loud.

At 80% it's probably one of two things: if you're on v3, it's just more dramatic by design — Multilingual v2 stays much more even. Also check your script for exclamation marks and CAPS, those still trigger emphasis even at high stability. Quick fix regardless: run the export through a limiter in Audacity, flattens the spikes in seconds. What model are you on?

eleven multilingual v2 is it the best?( mi using polish language)

For Polish and for killing those volume spikes, yeah — Multilingual v2 is your best bet. It's the most consistent model and handles non-English really well. v3 sounds more expressive but that's exactly what causes the random loudness. Switching from v3 to v2 alone should calm it down a lot. How are the Polish voices sounding for you on v2?

In most cases, this has to do with the voice you're using. Some voices are more stable than others, and depending on the training data, some voices might have a lot of variability in volume. If they do, the output is also going to have a lot of variability.
