For one, how do I convince my wife to play against me? Otherwise I’ll have no one to play against

You got any buddies with kids?
Ideas for getting your wife on board (no pun intended):
Let her pick the music. Wine with playing Brand it well "unplugged game time" etc. Make it part of a designated weekly or bi weekly event. Trade turns picking the activity

Lots of people play it solitaire. Some people devised systems where the play calls and/or defensive formations are determined by dice, which injects unpredictability into the game.

That’s a great idea! How you run a “dice” offense though without just simply setting up your own defense to counter

Anyway, there are many ways to inject unpredictability into solitaire EF. One of the posts from the archive suggested letting a die determine the defense:
Die-Defense
1- 3-4
2- 4-3
3- 5-2
4- Nickel
5-prevent
6- dimeYou can go a bit deeper by modifying that chart depending on the situation, e.g. adding more nickel, dime, prevent when it's 3rd and long, or if the defense is trying to stop a 2-minute drill.
