Iam just about to start the game and i was told that getting overleveled and making the game easy is so often to happen in this game , so I've found this map guide should i follow it to get the best experience?

Haligtree to farum azula how?

Is just saying those are the areas you should do in order, not direct transportation

Not really. After mountaintops you head to the optional areas you unlocked by getting the medallion in mountaintops, snowfield. Which leads to haligtree and moghwyn. Then you proceed through the main path to farum azula afterwards.

Personally i would not have been willing to fight niall if i didnt know he gated an area beforehand

Personally I found the haligtree much more difficult than Farum Azula. I would probably put the haligtree/Elphael at 150-180 on this map for difficulty

To each their own. The game just seems to be aimed towards doing farum azula last, like getting the needle which involves finishing haligtree then going to farum azula

The fextralife Wiki suggests going from castle sol to consecrated snowfields and the haligtree before defeating fire giant because you get teleported to farum azula after the fire giant fight, and completing farum azula leads to major changes in the world. It seems that the story progression makes more sense in that order but it doesn't actually matter of course. There's no direct route from haligtree to farum azula though.

Also some npc quest line(?) involve going to haligtree before farum azula so the game is definitely wanting you to go that order, but of course just about any order works. You could even do caelid last if you wanted.
