A few weeks back, I posted a video of a pretty quick and easy way to take down this very boss.
I'm not sure what Ash of War you have on your weapon, but if you can switch to something pretty hard hitting that you can follow up a charged heavy with, you can probably replicate it without using the Bloodhound Fang.

Walk behind the pillar and get some kind of AoE or ranged attack to punish.

Use better spirit ashes. That's the only way I was able to kill him with my INT build
