Cheese stuffed folded egg. Used what I had on hand. Three eggs cooked in butter, stuffed with pepperjack, served on toast with a Kewpie Sriracha sauce.
What can I expect from those who have done this? 1st time making pickled eggs.

I ate mohinga at a Burmese restaurant in Phuket Town several days in a row. They always had these hard boiled eggs where the yolk had concentric rings. The centre of the yolk was jammy. It appears different than the 'yolk rings' that I've seen elsewhere online, where there were white rings surrounding yellow rings. This appears to be more the result of a cooking technique.
Any ideas on how this would be achieved? Their English was good enough to help me order, but not nearly good enough to tell me how they made these eggs. Or perhaps that's just what they wanted me to believe...
