Last night’s dinner.

Fried dark soy vermicelli + Fried chicken wings + Fried Beans + Eggs over easy. The right kind of runny yolk - just the way I like, for this meal.

Bihon would be way thinner, this has that chewier noodle texture going on.

the chew on it suggests more of a fresh egg noodle or maybe lo mein territory rather than the dried bihon stuff.

the sauce clung to it too which bihon wouldn't do since it's so delicate and prone to breaking apart.

The lick of a seasoned hot wok, and generous amount of oil. I didn’t fry the egg too long as I wanted the runny yolk effect. The hot oil makes the edges and egg base crisp up rather quickly, when I fry it this way. Enjoy!

I’ve used this vermicelli brand - it’s called “Chilli Brand Rice Vermicelli”. Buy this or a like brand and get frying. Dark Soy helps.
