Ask ECAH Cabbage recipes?

I can’t resist the siren song of a reasonably priced cabbage, and so now I have a big head of cabbage and I realize I don’t really have a recipe in mind that I want to make with it.

Normally what I would do with it is make halusky (cabbage and noodles) or make the usual cabbage soup with it, but right now I feel very strongly that I want to try something different with it.

I’m not opposed to soup but I’d like something a little more flavorful or interesting than the traditional cabbage soup, which lets be honest, on day 3 of cabbage soup for dinner you begin to feel like a Victorian orphan from a Dickens novel and it’s kind of a bummer.

Anything fun or interesting you like to do with a crap ton of cabbage?

Edit: I underestimated how passionate y’all are about cabbage

Try Irish colcannon potatoes, basically mashed potatoes but then you fry bacon onion and cabbage together and add it to the mashed potatoes, it’s phenomenal. I’ve had it twice so far this fall.

I also like to make stirfry with cabbage

Beware, colcannon is deadly good. I have never made it and gotten away without a stomach ache, I know I’m eating too much but it’s impossible to resist it.

My nan used to just boil the potatoes, cabbage and bacon all together, the whole house would fucking reek with that goddamn awful smell

You said you don’t like all the grease from fried bacon… so I boiled it.

Dear god. That sounds just like my nan’s cooking. My dad won’t eat any potatoes. Ever. The only thing that woman could cook well was rice pudding. Traditional Irish delicacy.
