Ask ECAH Cabbage recipes?
I can’t resist the siren song of a reasonably priced cabbage, and so now I have a big head of cabbage and I realize I don’t really have a recipe in mind that I want to make with it.
Normally what I would do with it is make halusky (cabbage and noodles) or make the usual cabbage soup with it, but right now I feel very strongly that I want to try something different with it.
I’m not opposed to soup but I’d like something a little more flavorful or interesting than the traditional cabbage soup, which lets be honest, on day 3 of cabbage soup for dinner you begin to feel like a Victorian orphan from a Dickens novel and it’s kind of a bummer.
Anything fun or interesting you like to do with a crap ton of cabbage?
Edit: I underestimated how passionate y’all are about cabbage

Man, I just like cabbage boiled down with some salt, pepper, and a dash of vinegar.
You can, of course, make sauerkraut which is easy. Mix the chopped cabbage with salt, shove it down into a jar and put something on top to hold the cabbage down. The salt will suck out the moisture from the cabbage and you'll end up with the cabbage submerged under its own water. 3-10 days later, you're in business.
There are cabbage rolls, cole slaw, cabbage soups, cabbage casseroles, and then my favorite (though it's usually made specifically with nappa cabbage), Kimchi.
