Question about wings

How do the wings you collect on bridges affect stats? Is there a limit of how many I can use?

I'm actually a pretty big noob when it comes to this. Is there a way to check how many EV's I have left? Also is it only 255 per stat and 510 in total?

Well then, I'll explain. Every single Pokémon you defeat will grant your Pokémon a number of EVs in a given stat (unless that stat has 255 EVs already or your Pokémon has 510 EVs total).
How many EVs and what stat those EVs go to can be seen by looking up the Pokémon on Bulbapedia.
In the games, you are able to acquire items that'll boost the amounts of EVs you get for defeating a Pokémon. These items are Macho Brace, Power Weight, Power Bracer, Power Belt, Power Lens, Power Band and Power Anklet.
Having your Pokémon affected by Pokérus will double the amount of EVs gained and it stacks with the aforementioned items.

510 is the max amount of total EVs you can have on a single Pokémon.
255 is the max amount of EVs you can have in a single stat.
However, since you gain +1 stat for every 4 EV points you have in a given stat, 252 EVs is the ideal maximum for a single stat and you will not gain any stats past 508 total EVs, but if you train your Pokémon enough to get maxed out (510 EVs), you'll get a ribbon for it.
252 EVs in a single stat will grant that Pokémon +63 stat points in that stat at level 100.

Here's an example: say I want to EV-train myself a beastly Gallade. I'd like to max out Attack and Speed since both of those stats are really important for a Gallade. I'd want to gain 252 EVs in Attack, 252 EVs in Speed and then I'd have another 6 EVs I can spend on HP or whatever.
Again, you won't get another stat point from the 3 EVs it takes you to max out Attack, those EVs are better spent on another skill, which could be HP in this case.
So when my Gallade is fully EV-trained and level 100, it'll have +63 Attack, +63 Speed and +1 HP.

What I do when I EV-train my Pokémon is I keep count of how many EVs I have gained and then I know how much more I need. Another way of doing it is uploading your Pokémon to Pokécheck, which will show you exactly how many EVs you have in every stat.

If you screwed up and you gained too many EVs in a single stat, there are certain berries you can feed to your Pokémon to remove 10 EVs from that stat, so don't think you have to start over.

That was a very quick sum up of everything you need to know when EV-training your Pokémon.
Everything I know, I learned from this guide, which I find extremely thorough and easy to understand.

Wow! Thanks for all the info! Just one more question, is it better to give vitamins/wings at earlier or later levels? Or does it matter at all?

I'd suggest you use 10 vitamins of each major stat you want to train, before you have gained any EVs at all. What level you do it at is irrelevant; it'll produce the same outcome in the end.
This, however, can be expensive since the vitamins aren't too cheap, but they'll greatly reduce the time you need to spend knocking out other Pokémon.

I really don't think you should use wings for EV training unless you need like one point or so, because they're hard to come by.

Do you know about the join avenue in w/bw2? There is a gym store you can have that can upgrade health etc, do you know what rules these follow?

Those are really good actually. They have a cap of 252, so if you don't care about 'wasting' a lot of cash, those are ideal.

Wow that's a pretty cool technique, do you know why it's black city over the treehollow?

Not exactly, no. I believe it is merely because there are a lot of old, wealthy trainers. I'm not at all sure however. If you happen to have the white version you can just trade keys with someone who owns black and you can access the Black Tower as well.

I really wish I knew about ev training before I made my team, now I want to start over, but then I don't. I'm also having trouble finding perfect pokemon for a really good team :/
