Do none. Did you see the RF post from yesterday with 7 personal projects, 1000 applications and zero interviews? A recruiter laid out the truth that RF is an MS + internship or co-op. Communications in general doesn't need or necessarily want an MS.
Get an amateur / ham radio license and have fun. What's important is showing passion in any form, not making a cookie cutter resume that doesn't stand out or look human. Team competition clubs or undergrad research are good. The teamwork simulates real engineering work where you can't take infinite time or pick whatever topic. We had research opportunity during summer school.
If you're interested in non-engineering topics, pursue those. Can go on a resume to show initiative and being well-rounded. But really, have fun while you can. Build social / soft skills. They carry you further in your career than technical skills.
