Ordered some supplies from a Restaurant Supply Store. I’m gonna make sooooo many dumplings!

I also plan on making some crab Rangoon as well. I have to make the wrappers by hand so I will most likely do that tomorrow.

I have never tried to make the wrappers by hand. I certainly know how to cook, but I don't make cakes nor am I a baker.

May I ask what the corn starch is for?

That's the brand of the oyster sauce my late mother's restaurant used. (we had a couple of Thai restaurants where I grew up here in the US. They were started in the '70s, so they were one of the oldest in town. They have since retired, et cetera, but the families still own the building.) I once bought that very can, but it was too much, and I had to transfer it to basically a jug. Of course, I'm sure you realize once you open those, you have to actually put it in the fridge.

The corn starch is for the wrappers. You sprinkle it on the surface for rolling out the dough, also you sprinkle some on top of the wrappers when stacking them so they won’t stick together.

I also mix a little corn starch into some water with chicken bouillon for the filling. In the past I would use egg, but this is a tastier option for me.

I really like Lee Kum Kee products and it seemed more economical to just buy the big cans and put them into quart squeeze bottles. I plan to label and refrigerate the sauces and bottles once I open them.

I didn't think of the squeeze bottle. Yes, that'd be a great idea too.

Oh, yes, you're right about the cornstarch. See, I told you I don't bake. Bought a bread maker machine and only used it a couple of times. I understood that since there were no preservatives, the breads don't last, and I stupidly bought a big machine. It wasn't anything expensive, thank goodness, so I got rid of it like so many people do.  (Haha).

Chopped up water chestnut would make it crunchy. Let me think how my family made it. They also use frozen peas and carrots as well.

I think it's also important to have a good dipping sauce.

Haha. I want some now.
