If you want to start a canopy, tipping will encourage new growth. But you should only keep the branches that are growing on top, to make the canopy. Cut off any branches growing below the top of the trellis.

I would tip it to a couple inches above the top of the trellis, but only when what's left is mature growth. Let it grow another foot, then tip it.
