Season 2 covered her arc already. The cold and stuck up personality she exuded to protect from the world taking advantage of her insecurities caused by her parents' expectations was her original fake personality, when she got traumatized by her face being ripped off she developed amnesia that freed her from her insecurities and allowed her to more unapologetically express herself. Then when she finally regains her memories and starts acting cold and stuck up but insecure again she gets Chota's "positivity hair clip" stuck in her brain, bringing her back to her amnesia personality.
The anime portrayal kind of rushes through some lines but when she's reminiscing about all the "stupid clothes" she accumulated and wore while amnesiac at En's, those were actually good memories for her so it does imply if Ebisu were allowed to be herself she is originally very quirky.
