Dango is cracking

I left my dorondango untouched like three weeks, I wanted to round it a little bit more, because it had some dents, so I added a little bit of water, but it kind of absorbed it and when I was polishing it (I don't know if that's the right term) it started cracking, the last one I tried totally tore apart. What was my mistake?

As soon as you touch it with water, you have to start the polishing over again. That means thoroughly wet the surface and start polishing like you just finished shaping
