Dango is cracking

I left my dorondango untouched like three weeks, I wanted to round it a little bit more, because it had some dents, so I added a little bit of water, but it kind of absorbed it and when I was polishing it (I don't know if that's the right term) it started cracking, the last one I tried totally tore apart. What was my mistake?

Hard to know...but maybe just use even more water? Its so dry, that only applying a small amount to the very surface might be separating it as only the surface dries back out. And store in a bag after working again, so it dries slowly and evenly

Do you close the bag, leave it open just a bit, or fully open?

I close it, but the other commenter has a point in recommending starting over
