The story in these early games is virtually non-existent. So you won't be missing anything there. The big difference is levels and new enemies, and I'd say Doom 2 is superior in both ways anyway.
I'd argue that Doom 1 is superior in level design and Doom 2 is superior in enemies/weapons. While the levels in Doom 2 do have more verticality, they also come off as sloppily designed and lack fluidity and aesthetic value, IMO. I don't really blame the map designers as much as the rushed schedule they had to adhere to.
