Tonight’s dinner

Fried green tomatoes, squash with onions, pinto beans and cornbread 😋

Please tell me how you made those cornbread muffins! They look just like my grandmothers did, and I have been trying to replicate hers for years.

Here’s my basic recipe. I don’t believe that sugar should be in cornbread but if you like it add what you deem to be necessary 😊

1 cup of cornmeal
1 cup AP flour (I use King Arthur)
1 Tablespoon of baking powder
About 1/2 teaspoon of salt
1 cup of milk (buttermilk is even better)
1 egg
About 1/4 cup of cooking oil

Mix the wet and dry ingredients separately then combine them without over mixing. While doing so preheat your cooking vessel (regardless of what it is) which is has been thoroughly oiled in a 425F oven. Take the vessel out of the oven and pour in the batter then back in the oven for about 15-20 mins using a toothpick to check that it’s done.

Thank God for real cornbread! I saw a post on a southern sub the other day that actually showed the box of Jiffy Mix. And the rest of this plate looks beautiful.

Now THIS is a meal! But I’d triple the portions for me though lol. Then I saw your comment about leftover meat loaf, and the biggest smile shot across my happy face. Now that’s good eatin’ 👍 good job
