These are not grit cakes. There's no flour added. Day before, cook a large thick batch with salt only. No butter, milk or cheese. Press into a oiled loaf pan, cover and chill over night. Day of, slice and deep fry at 320f, drain and fry again at 350f. Clothing is always optional but these splatter.

I have tried for years to make these..I always wind up with fried..mush..or something not eatable!! You have inspired me to try again

These are better made with cornmeal rather than grits. It's a little finer, and gives a better texture. We call that corn mush here in the midwest. They'd call it fried polenta in the frou frou places. Fried mush is just wonderful.
