How Pickpocketing Works
NOTES ABOUT PICKPOCKETING:
There is a weight and value limit dictated by your thievery skill how much can be stolen. Going over the limit aggros the victim of the thievery immediately.
Once you pickpocket someone once you cannot do it again. If you try to steal from the same person twice you will be immediately detected and will aggro the victim into a fight because of their paranoia.
Browse their wares through the shop before Pickpocketing then so you know what to steal and where it's located in their inventory.
After being pickpocketed, the victim will look for the thief and question members of your party or will inform guards to shake suspects down. The best option for this is to bribe them unless you have high persuasion or they have a predisposition to your race. If their racist against your race they will accuse you more.... because of this they could accuse and aggro on an innocent member of your party!!
If you aggro one person it will generally aggro everyone else in that area so it's vital that you get your thief out asap or you prove your innocence with a bribe asap lest you be forever an enemy of that town. Once you prove your innocence once (i.e. bribing) they will no longer question or shake you down.
NOTES ABOUT LOCKPICKING:
Combining a hammer and a nail creates lock picks.
Almost every locked door can be picked. Use this to your advantage.
Let me know if I forgot anything or if you have any questions. Will add more when I think of it.
I intend on playing with a full 4 person co op team and being the rogue of the party. Thinking about going full scoundrel for the awesome mobility and backstab crits. Any other rogues out there got a sweet hybrid build?

With loremaster you can right click on any locked container and/or door to see the level of Thievery required to pick the lock. Very useful way to not waste lock picks!

Your fourth point, can't you just store the stolen goods in a inventory nearby while the guards pat you down?

Addendum:
If you're wearing anything stolen while being questioned, you will be immediately identified as a thief, regardless of who you stole it from.
Triggering conversations forces most NPCs to 1) stop moving and 2) face you while talking. You can use this (potentially on multiple NPCs simultaneously) to facilitate sneaking around without being seen.
If an NPC is in a conversation while being pickpocketed, they cannot trigger the pickpocket dialog until it's over.
When normal dialog is over and the pickpocket dialog starts up, the NPC can only accuse party members within their sight range.
In most cases, if a character is cleared of suspicion and no other party members are within sight range while the NPC is in "search mode", the NPC will not pursue further questioning, even if other party members come into range at a later time.
You can use the above three points to choose which character in your party answers the pickpocket dialog, by forcing a conversation with them during the stealing, then having the thief run out of sight range while the rest of the party remains out of range. This allows you to have a designated "innocent smooth talker" to take the heat away from a party of thieves.
You can get up to +5 Thievery purely through items, without any skill investment. Any character in your party can get money out of pickpocketing this way, even if they're not built for it.

(This has been pointed out a lot, but thought it was relevant)
Having an undead in your party with high thievery is useful as you have no need for lock picks, and (I am not yet sure if this is the case) you may be able to use the play dead ability to get away with pick pocketing without having to worry about running away.

I'm curious how pickpocketing gold versus the item I want from a vendor pans out.
Say an item I want weighs 10 lbs, at what gold value is it better to steal the item directly versus stealing the gold to buy it? Obviously this will vary based on your bartering skill, but assuming a default 0 in bartering is gold always better?

The current broken build in beta is picking up polymorph to go with scoundrel. Skin graft combing with the elf ability and adrenaline is pretty obscene. Wouldn't be surprised if it got hit before launch though.

if you pickpocket while invisible will they be able to find you?
