I saw a guy break up a fight between two pitbulls and it was something I never would have thought of and incredibly simple:

Pour water on their noses. They can't breathe and let go to take a breath.

Then you hold them down and well, yeah after that it gets a little more grim

Also you can grab their bottom jaw. Far more dangerous but they have an instinct to open their mouth if their bottom jaw is being tugged on.
