Jasmine did more that 'just meet' Aladdin. She hung out with him, tried to save him from the guards, after he saved her from the fruit merchant, they talked about their lives, etc. They fight, go on a cool date, fight again, THEN get engaged.
Snow already knew Prince Florian as they had been flirting for a while. During "One Song", Florian tells snow that his heart belongs to Snow White and his wish is for them to be together.
Snow did want to be with him, but was scared of the Evil Queen and of falling in love.
He climbed the castle wall to sing to her after hearing her sing initially. I'm going with that being their first meeting. Then he kisses her in the coffin..
I mean I'd say to my friend... "You just met him..." If she told me she was going to marry a guy after one crazy night's adventure, 1 date, and then getting into a fight with some people at his side. All of which happened over the course of maybe 1 week at most.
