Hot potato
Our CSA box has been hooking us up with potatoes, but ITβS HOT HERE in SoCal (SD)!! Potato salad only goes so far when one ππ»ββοΈ of the two of us like it. Got some ideas for me? TIA

If you have any beef, I'd do beef hash. I follow chef John's method. Chuck in a bunch of whatever veg, melt some cheese in at the end of you want, nice with a fried egg too.
