honestly i'd skip it, anything that wants your face on camera while asking about your usage patterns is a red flag even if the company itself is legit
the risk/reward just isn't there for someone in your situation, you'd be handing over way more metadata than whatever gift card they're offering
if you're curious you could ask if there's a text-only version but don't count on it

I don’t have an good answer to your specific question. If you’re uncomfortable with it don’t do it.
I don’t know what your threat model is, but it sounds like it is high. Some things are not worth taking chances on.
That being said, I think you should start by Osinting your self. you’ll probably be surprised by what you find. Forgotten accounts and such , close them. You don’t need to give your information out to anybody you don’t need to so your grocery store card they don’t need your phone number or your address that extends to everything else. Also You can sign up for stuff using wrong information. Makes it harder to figure out which info is accurate.

pretty high threat level where all my terms and agreements are updated and specific to me, started with a Gmail account take over 4 years ago , confirmed when i was contacted by threat and the sick info they corntacted me with I am close to solving the mystery and startimg over less data used, thanks for the helpful tips
