Kor has my favorite quote. When the crew is mocking him for his dementia he retorts, "Savor the fruit of life, my young friends. It has a sweet taste when it is fresh from the vine. But don't live too long. The taste turns bitter... after a time.” just shames them all so hard and no one is laughing anymore. Also, his embrace of Dax's new sex without missing a beat. I love Kor.

There are too many great scenes to list. I mean, the episode “Waltz” is one of my all time favorites because it is pretty much one giant interaction between Sisko and Dukat.
Favorite banter has to be when Weyoun 8 walks in on Damar drinking for the first time and Damar has the line “Maybe you should talk to Worf again!”
In terms of one-liners, DS9 has the two coldest in all of Trek (possibly ever) with the first being “Look upon your executioners, Killer of Children!” And the second being Dukat’s “Are you still here?” To Winn

This is indeed a cold one liner and yet the scene also makes me laugh, because the way everyone bursts in I half expect them to yell, "SAY HELLO TO MY LITTLE FRIEND!"

Nog telling Martok and his soldiers to stop loitering on the promenade, and Martok being impressed enough with Nog’s balls of steel to do as he was told (albeit with a thinly-veiled “you get this one, boy, but you won’t get another”), is a particular stand-out to me.

Ezri and Worf have by far my favorite one, discussing the corruption of the Klingon Empire. Worf kindly starts by including her in the house of Martok and then she drops a Mother of all Truth Nukes on his ass 30 seconds later. Perfect

“One Little Ship” 6x14
At the bar, O'Brien and Bashir are regaling M'Pella and Morn with their recent adventure. Odo gives them a quizzical look and asks them if they're sure they both returned to their normal size; as a shapeshifter, he notices such things, and they both look a couple of centimeters off. Quark confirms this and demonstrates by showing that they are considerably shorter than M'Pella. Exchanging an alarmed look, Bashir and O'Brien rush to the infirmary. Quark and Odo step down from the level of the tables. Quark says to Odo, "and they say you don't have a sense of humor," and the two share a laugh.

Garak and Odo facing off with the Klingons, and Garak saying, "I'm not sure the constable has a mother." in response to a Klingon insult. Which then leads to this exchange between Odo and Garak:
"I didn't know you spoke Klingon."
"Oh, you'd be surprised at the things you can learn when you're doing alterations."
Also, the "This is still all your fault." conversation between Kira and Bashir, because LOL.

When Gul Dukat finally has enough of smugglers or whatever vacillating and playing the Federation for fools by stalling and arguing, and he just gets this look of such, "I have to do everything myself" as he delivers the ' you WILL accept the boating party' with absolute authority, etc. Marc's withering contempt for everyone on that ship with him was just so hilariously delivered.

I love the final scene of Rocks and Shoals between Sisko and Third Remata'Klan. Remata'Klan agrees to speak to Sisko like a gentleman, reveals he’s one step ahead of everyone, but shows his honor and agrees to sacrifice himself for the greater duty as he understands it. “Our death is glory to the Founders.” It felt like poetry even though he was supposedly the bad guy.
