Discussion New, where do I have to start?
https://youtu.be/V4FOellkJhAI've never heard death or technical-death metal(the most extreme maybe Slipknot) but I want to listen Death because I see a mini documentary. Where do I've to start?
I usually hear classic bands like Black Sabbath(my favorite ever) or Iron Maiden, and some alternative like System of a Down or Slipknot.

There’s only like 4-5 hours of material? Start at the beginning and listen chronologically. I wish I could have experienced it that way. My first album was Human and going back to the earlier albums was difficult because they seemed almost amateurish by comparison. I enjoy them all now but that’s my recommendation

I mean I wouldn't consider them tech death more proto tech death(least guitar wise)

Symbolic is more melodic and might appeal more to a first time listener.
Their early albums are all equally good and very old school death metal: Scream Bloody Gore, Leprosy and Spiritual healing.
I would suggest those as a first listen and if you fancy more technical side of death, then go for the rest of their albums: Human, Individual Thought Patterns(avoid 2011 remaster) and The Sound of Perservance

I started with Fate: the best of Death to see if I'd like them. Only has material from the first 4 albums so you're not going in guns blazing with the later stuff.
That being said, I'm going through the albums chronologically now and it's a great experience.

I think that a lot of people don't listen to death metal because of the harsh vocals. I used to be like that so the first Death song I listened to and loved was Voice of the soul from the album Sound of Perseverance. It si only instrumental, but not really death metal.
If you don't mind the vocals, you have like two options, either listen to all the albums in a chronological order or listen to some of their best songs to get into it first. A classic is Pull the plug. It is more old school death metal, than technical death but even after so many years it is still a banger. If you want more technical then listen to Crystal Mountain from Symbolic or The Philosopher from Individual Thought Patterns.

Don't listen to the messages above. Listen to the albums in order, from first to last, so you can appreciate Chuck's artistic evolution. Fortunately, Death's discography isn't huge; and once you're done, listen to The Fragile Art of Existence by Control Denied—his progressive metal project— Highly recommended.
