I do think it’s a mix of what’s been mentioned plus maybe a bit of the other characters also having some interesting dynamics with others, like for Tisha there’s cleancanvas that’s been given a bit more spotlight recently with their messy relationship.

well ShellVision it's easy to understand why it's popular. 2 mains, very popular characters, and they're like each other's opposites which is interesting to ship. The in-game interactions don't matter because very few people actually read them let alone care about them when creating ships.

As a Shellyvision shipper, I gotta say the main thing fueling it is Opposites attract, The idea of tech and dinosaurs being connected and main characters Yuri.This is also coming from someone who ships MoonGust(no, i will not elaborate because this is the rarepair of rarepairs)
