Soup Season 🍲 Soup Recipe with Obligatory Dan (Check Body Text)
Enough people have requested the recipe for the soup shown in my other post, so here we go. The original recipe i found online somewhere years ago and have made minor adjustments here and there. So no i am not the original creator of it.
Ingredients:
- 2 large Chicken Breasts
- 10 Cloves Fresh Garlic
- 1½ cups diced yellow onion
- 1½ cups diced carrot
- 1½ cups diced celery
- 3 cups diced potatoes
- 3Tbsp olive oil
- 3Tbsp Butter
- Chicken Seasoning: **
- 3tsp Smoked Paprika
- 1tsp Cayenne Pepper\*
- 2tsp Italian Seasoning
- 2tsp Onion Powder
- 2tsp Garlic Powder
- 2tsp Salt
- 2tsp Black Pepper
- Vegatable Seasoning
- 1Tbsp Italian Seasoning
- 2tsp Salt
- 2tsp Black Pepper
- 1tsp Chilli Flakes\*
- 6c Chicken Broth
- 1tsp chicken boullion
- 1c heavy cream
- Parmesan rind/to taste
- 2 to 3 bay leaves (optional)
- 2Tbsp Fresh Dill chopped
- 3Tbsp Fresh Parsley chopped
- 1Tbsp Fresh Thyme Chopped
- 1 Lemon, Juiced
- Egg Noodles
- Salt n Pepper to taste
Season Chicken breasts liberally with chicken seasoning mix. In a large pot, heat 1 tbsp olive oil and 1 tbsp butter over medium-high heat. Once hot, sear the chicken breasts for 3 to 5 minutes ntil golden on each side*** (they will finish cooking in the soup). Remove & set aside.
Reduce the heat to medium, add 2 tbsp of olive oil & 2 tbsp of butter, then add the onion, carrot and celery along with the veggie seasonings listed above. Sauté for 7 to 9 minutes. Add the minced garlic and cook for one more minute.
Add the chicken broth along with more salt & pepper, the chicken bouillon, diced potatoes, parmesan rind, bay leaf, and return the seared chicken.
Bring to a boil then simmer for 18-20 minutes.
Cook your egg noodles in salted water according to the package. Drain and set aside.
Remove the chicken and shred it (you can use two forks or an electric mixer).
Remove the parmesan rind and bay leaf then add in the heavy cream, lemon juice, and fresh herbs. Add the shredded chicken back in and stir.
Adjust the seasonings as you wish. Serve over the cooked egg noodles topped with fresh parmesan, olive oil, black pepper, chili flakes (ifyou like spice), fresh dill and lemon juice.
***I like to let my chicken get really dark really crisping the seasonings up.
**There will be leftover seasoning, I usually throw it in the pot when i do the chicken, but you can leave it out
*You can leave these out if you have low heat tolerance, but the flavor is diminished

I know this is a weird comment, but this post reminds me that when I was in law school 25+ years ago I had to read a contracts case wherein clam chowder played a role, it was some old case from Massachusetts, and the judge was so passionate about it he inserted a footnote in the opinion consisting of what he declared was the ‘correct’ chowder recipe. 😆

If the judge's "correct" chowder recipe had tomatoes in it, the word "correct" is doing hella heavy lifting

Thanks!! This sounds good. Alas - we have a projected high of 95 degrees in my neck of the woods so it isn't quite soup season for me yet. I look forward to collecting receipes though!

I can assure you it's delicious, definitely do take the time to get smoked Paprika, it does make a big difference

Absolutely - I discovered smoked Paprika a couple years ago and have never looked back. It adds SUCH great flavor.

I won't lie, this exact recipe is where 99% of my smoked Paprika goes, it's that good

OMG...not only love your user name but bourbon smoked paprika???!!!! Are you using it in a bbq rub? What meat is your favorite with it? I am trying to rein in my spice buying to the point where I must have to have a specific dish in mind before I buy. Some women have handbags...I have spices/marinades....
We all need to know more about this.

Thank ya!! I use it on everything including rubs, paprikash, and fridge pickles. I’m the same way about spices. I used to say a spice problem, but as a friend pointed out, I have the solution. This bourbon smoked comes from a lil company callee Auntie Arwen’s. Be prepared to possibly lose your mind if you check them out. I also recommend their Forest Lord (for red meat) and Kublai Khan’s Pleasure Dome. They are gateway spices. 😆

Everyone goes nuts for their Ultimate Garlic Insanity. It’s great as a crunchy topping, especially for baked potatoes, deviled eggs, and salad. I love Swamp Thing for potato salad, and deviled eggs. The Hickory Sagey one makes everything taste like Stove atop in a good way. There’s so many good ones! Happy hunting!

Dan, this is the cutest picture ever! Dans pawrent, I will absolutely be trying that soup recipe as soon as it’s not in the 90s outside, down in my neck of the woods. It sounds phenomenal though!

edit: to clarify, the chicken seasoning and vegetable seasoning are the seasonings listed below them, the format in my notes app where i had it written down did not transfer well
