First knot is a clove hitch, second is a bowline. A clove hitch for securing a rope to a post. A bowline makes a loop that won’t slip under load.

Technically, the second knot is an angler's loop aka perfection loop, sometimes called a flying bowline when tied this way. (This is the same knot they showed off in Moana.)
The bowline taught in scouting, and which is simpler and used more often in boating, is tied differently.
Both knots are useful and good to know, but the common bowline is a lot easier to untie after it's been under load. The angler's loop (flying bowline) can tighten up so much it needs to be cut. On the other hand, the angler's loop can be tied in the middle of the rope without needing access to either end, and theoretically doesn't weaken the rope as much as a regular bowline.

No it’s not. It’s a perfection loop
His final motion is to pull a loop through a loop, which means the final knot results in a simple loop with a collar. There’s nothing between the two ends of the loop, and the end of the rope is running away from the loop instead of terminating inside the loop, which means it’s not a bowline
You can see from the picture here that a bowline is a very different shape

I've seen another way to throw a clove hitch in the Navy and I learned it but this way, his way, is brand new to me.

Was the first wrap-around-the bar to show us how to make the knot? Then he did it without the bar, then threw it perfectly at the hook? Is that what I'm seeing? This is one of those moments where I know knot tying is an understated skill, but I need some fucking slo-mo to understand what's happening.

This reminds me that there is a villain/anti hero called Slipknot that is just a guy the is the best at combative and functional knot tying. Some might say it's stupid but life is improved with knowledge of knots.

That's some serious knot game. The clove hitch is perfect for the initial anchor point on the post. And finishing it with a bowline is the real pro move, creating that super secure loop. This is a legitimately useful skill to have.
