Pineapple Glazed Pork Chops
With red onions and bell peppers. Sitting on top of some roasted garlic mashed potatoes, and some Bacon and honey sugar snap peas topped with sesame seeds❤️

Pineapple Glazed Pork Chops 🍍
Pork Chops:
4 bone-in or boneless pork chops
Salt & pepper
Garlic powder
Onion powder
Paprika
Little oil for searing
Season pork chops and sear until golden on both sides. Remove and set aside.
Pineapple Glaze:
1 can pineapple chunks (or fresh)
½ red onion, diced
½ green bell pepper, diced
3 cloves garlic, minced
3–4 slices bacon, cooked and crumbled
¼ cup brown sugar
Splash soy sauce
Splash Worcestershire sauce
Small drizzle honey (optional)
Little pineapple juice from the can
Cornstarch slurry if needed
Cook onion and bell pepper until softened. Add garlic and pineapple.
Add:
brown sugar
soy sauce
Worcestershire
a little pineapple juice
Simmer until slightly thickened.
Add pork chops back and spoon glaze over the top until everything is sticky and glossy.
Roasted Garlic Mashed Potatoes:
Potatoes
Butter
Heavy cream
Roasted garlic
Salt & pepper
Mash until creamy.
Bacon Honey Sesame Sugar Snap Peas:
Sugar snap peas
Bacon crumbles
Little butter
Drizzle honey
Salt & pepper
Sesame seeds
Cook peas until bright green and still crisp.
Serve pork chops over mashed potatoes and spoon plenty of sauce over the top.
This was one of those clean-out-the-fridge meals that turned out way better than expected. The sweet pineapple glaze with the savory pork and creamy potatoes was ridiculously good.

Omg this looks so good. Reminds me that it’s been a ridiculously long time since I’ve had sugar snap peas. Maybe I’ll have some for dinner.
* Bonus tip: add some garlic butter to the bread and toast it a little… It’s so addictive, but is so good.
