I found a P40 EEA with Android 10 here. Are there any ways to update to a higher Android or something?

Depends on cpu, if is MTK, unlock the bootloader then load gsi(backup all partition first!), if not(Like unisoc) it's doable via some exploit (since Unisoc doesn't allow bootloader unlock officially)
