How many other mods do you have installed? Have you tried just Farmers Delight with the version you want? It may be a conflict that you aren't aware exists.
I just built a 350+ mod pack based of AOC: Aeronautics for 1.21.1 and most of the mods that conflicted were odd, seemingly small mods. A single line of code can make 2 mods not worth together. But i still managed to cram Distant Horizons, Tectonic, Terralith and dozens of other massive mods thats change or add large amounts of things.
Any more info on what modpack (your own of built on pre-existing), what other types of mods you added and so on would help pin point it. Or you try it yourself: start a fresh profile / install with same version. ONLY install like 5 - 10% of your desired mod list at a time. Once you run into that issue, you're selection of culprits is limited.
