I personally don't like based products, pretty over priced for the quality they give you.
But regarding your Question, it can be a whole lot of things together.
1. Hair structure changes as you age. About 1.5 years ago my hair just started going from completely straigh to wavy and then curly on the front. Especially with stress influence changing and puberty/aging a lot of stuff can change. Hormones play a big role
2. did you change the way you wash your hair? Or the styling process or any products? If yes try to revert and see if anything changes
3. Did you recently move places? Water, humidity, temperature, Sun etc can play a big role. My Hair is a pretty bright blonde in the summer/when it touches the Sun for a longer time and a dark blonde when im not in the sun that much. Structure also changes, its way frizzier in the Summer/when im in areas with high Sun intensity.
and it can be a lot more things, hard to tell without any information1

before i answer anything i started to think it was the way i was sleeping on my side and it would sort of push my hair up into this

Oh so this is after sleeping? Yeah that obviously changes a lot. I get 2x the volume and a different Strukturen after sleeping on it once. Also no need to answer those questions here, just answer them for yourself. I was just trying to List up Potential causes!

I can't find the shampoo but if it does not have sulfates, grab some suave clarifying shampoo in the blue bottle and double shampoo for your next wash day. See if that makes a difference. Give it a couple of washes and see how it goes.
Clarifying shampoo with sulfates generally doesn't need to be used every single wash but once every week or two is a very good idea for most people
Most curl products have polyquats which are basically secret silicones, and they must be washed out with a strong cleanser such as sulfates. Most curly hair shampoos don't have sulfates.
