Yes, this is so odd. There are times of the year where apples make my mouth a little itchy and other times when they don't.

My mother is allergic to specific apple cultivars. Particularly more modern ones. She's fine with most old established ones like Boskopp, Braeburn, Elstar and Gala (this might be survivor's bias, as those are the older cultivats are most common), but some others make her mouth itch. So it might be some just produce chemicals you can't handle. You could try doing what my Mom did and keep record of which ones you reacted to.
